Zucchini alla scapece - zucchini slices fried and then marinated with garlic and mint. A simple, delicious Neapolitan dish.
Zucchini alla scapece is a simple, easy to prepare, incredibly tasty Italian appetizer made from a minimum amount of ingredients. The term "scapece" in the name of the dish refers to the method of preparing zucchini, namely the use of a vinegar-based marinade.
The base of the dish is pieces of fried or baked zucchini slices, marinated in a simple olive oil and vinegar marinade, and seasoned with garlic and mint. The amount of mint can be adjusted to your taste. In most Italian recipes, their exact quantity is not even indicated, they simply write - a lot.
There are a minimum of ingredients, even a beginner can handle the preparation, and the taste is amazing. An excellent side dish and snack on its own. Try it!

Zucchini – 1-1.2 kg
Refueling:
Mint – 5-7 sprigs
Garlic – 1 clove
Olive oil – 4 tbsp.
White wine vinegar – 3 tbsp.
Salt - to taste
Ground black pepper - to taste

1. Cut the zucchini into thin slices (about 3mm thick).
2. Place some of the zucchini slices (as many as will fit) in a single layer on a baking sheet lined with baking paper.
3. Place the zucchini in an oven preheated to 200 degrees and bake for 15-20 minutes, until cooked (the slices will become soft and acquire a light golden hue). Repeat procedure with remaining zucchini slices.
4. Prepare the dressing. Separate the mint leaves from the stems and tear into large pieces. Add 1 minced garlic clove.
5. Pour in olive oil and wine vinegar. Mix everything well, add salt and ground black pepper to taste.
6. Place a layer of fried zucchini in a deep plate. Drizzle with a small amount of dressing (about 1-1.5 tbsp).
Repeat the procedure, laying out the remaining zucchini slices in the same way and distributing the remaining dressing between the layers.
7. Cover the plate with a lid or cling film and place the appetizer in the refrigerator for at least 2 hours to marinate. Before serving, garnish the plate with mint leaves.
8. Zucchini “alla skapeche” are ready. Store the appetizer in the refrigerator and serve chilled.
