First of all, potato salad with pickles, corn and nuts attracts with its appearance: it is bright, colorful and difficult to miss. The products are quite simple and affordable, with the exception of bell peppers out of season and the inherently expensive cashews. Nuts can be replaced entirely with walnuts, for example, but pepper - yes, you can’t do without it. The effect is not the same. Red bell pepper both visually decorates the dish and perfectly complements the salad in taste.

Ингредиенты

Boiled potatoes (peeled) - 400 g

Pickled or pickled cucumbers - 210 g

Bell pepper - 1 pc.

Canned corn - 110 g

Mixed nuts (walnuts and cashews) - 25 g

Fresh parsley and dill - to taste

Vegetable oil - 1-2 tbsp.

Sesame seeds - 1 tsp.

Salt - 0.3 tsp.

Lemon juice - 1 tbsp.

Ground black pepper - on the tip of a knife

Рецепт

1. Cut the potatoes into medium-sized slices and place in a bowl.

2. Add salted or pickled cucumbers, cut into small slices, as well as sweet peppers, peeled and cut into strips.

3. Add canned corn, chopped herbs and nuts. It is better to lightly dry the nuts in a dry frying pan beforehand (they taste better this way), and then chop them coarsely.

4. Stir the salad, add salt, black ground pepper, vegetable oil, lemon juice and mix again. Adjust taste if necessary.

5. Potato salad with pickles, corn and nuts is ready! When serving, sprinkle lightly toasted sesame seeds over the salad.
