Homemade tkemali sauce

Tkemali sauce is very tasty, aromatic, ideal for any type of meat and fish.
I highly recommend making it yourself rather than buying it at the store. Moreover, you won’t spend much time preparing it. According to the original recipe, real tkemali sauce is prepared from tkemali plums (cherry plum). I made it with my own homemade plums.
Ингредиенты
Plums – 1 kg
Dill greens – 20 g
Parsley – 20 g
Garlic – 1 head (medium)
Khmeli-suneli – 2 tsp.
Dried mint – 1 tbsp. l.
Ground chili pepper – 0.25 tsp.
Sugar – 2 tbsp. l. (with top)
Salt – 1.5 tsp.
Рецепт
1. Simmer the plums until soft.
2. Finely chop the garlic (you can use a garlic press).
3. Finely chop the greens.
4. Grind the plums through a sieve so that the mass is homogeneous. (You can grind the plums in a blender, but then the plum peel will be present in the sauce.)
5. Add herbs, garlic, salt, sugar, pepper, suneli hops and mint to the pureed mass.
Place the homemade tkemali sauce on low heat and after boiling, simmer for 5-7 minutes.
6. Homemade tkemali sauce is ready. Bon appetit!
