Botvinya - cold soup

Botvinya is a cold soup made with bread kvass, or a mixture of kvass and beetroot broth, something between beetroot soup and okroshka, with a delicate, gently spicy taste with a hint of bitterness.
It is prepared with a lot of greens and beet tops, hence the name of the soup. We prepare the necessary products.
Ингредиенты
Beetroot - 200 g
Cucumbers - 200 g
Radish - 150 g
Beet tops - 200 g
Fresh sorrel - 150 g
Fresh spinach - 150 g
Green onion - 30 g
Parsley - 30 g
Dill greens - 30 g
Water - about 1 l
For filling:
Bread kvass - 500 ml
Mustard (sauce) - 1/2 teaspoon
Horseradish (sauce) - 1 teaspoon
Lemon (for juice) - 1/2 pcs.
Sugar - 1 tbsp. spoon
Salt - 0.5 teaspoon
Рецепт
1. Peel the beets (or wash them very thoroughly), fill them with water in a saucepan. Cook the beets until tender (soft), 30-40 minutes.
2. Then remove the beets and cool. Pour the broth into a convenient container, squeeze the juice of half a lemon into it and leave to cool.
3. Peel the cucumbers and cut into small cubes. Cut the radishes into small cubes. Finely chop the dill, parsley and green onions.
4. Cut the beets into the same cubes as other vegetables.
5. Chop the spinach and sorrel randomly.
6. Finely chop the beet tops along with the petioles.
7. Pour boiling water over the spinach, sorrel and tops and leave for 30 seconds so that all the greens soften.
8. Mix chopped beets, radishes, cucumbers, parsley, dill and green onions in a bowl. Mix.
9. Add blanched greens (sorrel, spinach, tops).
10. To fill, combine salt, sugar, mustard and horseradish in a bowl.
11. Add kvass and cooled beet broth (about 500 ml). Mix everything thoroughly.
12. Pour the resulting mixture over vegetables and herbs. We taste and adjust the taste. You may need more beetroot broth, to suit your taste.
13. Pour into plates and serve.
