There are a lot of options for preparing this delicious dish. I offer you a recipe for the most delicious, aromatic stew of pork with vegetables and herbs in a thick sauce.
This is the most delicious stew I know. Pieces of pork fried until golden brown with vegetables are stewed in a sweet and sour sauce, the meat turns out incredibly soft and juicy, and the vegetables perfectly complement this exquisite, rich bouquet.

Pork - 0.5 kg
Potatoes - 1 kg
Zucchini - 1 pc.
Bell pepper - 3 pcs.
Hot pepper - 1 pc.
Tomatoes - 4 pcs.
Carrots - 2 pcs.
Onions - 3 pcs.
Garlic - 5 cloves
Parsley
Tomato paste - 5 tbsp. l.
Vegetable oil

1. Cut the pork into small pieces.
2. Place in a frying pan heated with vegetable oil.
3. Fry over high heat until a beautiful golden brown crust appears.
4. Cut the peeled onion into small cubes.
5. Cut the carrots into slices.
6. Add onions and carrots to the meat in the pan.
7. Stir and fry everything together until the vegetables are soft, about 2 minutes.
8. In the meantime, let's take care of the zucchini, potatoes and tomatoes. Cut the zucchini into 1.5-2 cm pieces. If the zucchini is not young, then it needs to be peeled and seeds removed. I was young.
9. Transfer the chopped zucchini to a cauldron or other suitable container in which to simmer the stew.
10. Cut the potatoes in the same way as zucchini. Transfer to the zucchini. Scald the tomatoes with boiling water and remove the skin.
We cut them like the previous vegetables and send them to them. Mix zucchini, potatoes and tomatoes. Cut the peppers, seeds and stems removed, into small squares. We cut the garlic into slices. Spicy lovers can add hot pepper to the stew, but don’t get carried away, half a pod will be enough.
11. Add pepper and garlic to the pan and fry for half a minute, stirring constantly
12. Then add tomato paste, stir, cover with a lid and simmer for another half a minute over medium heat. Transfer the contents of the frying pan to the cauldron with the rest of the vegetables.
13. Stir, add salt, black pepper, bay leaf and 2 cups of water.
14. Place the cauldron on high heat and cover with a lid until it boils.
15. Then reduce the heat to medium and simmer the meat stew with vegetables until the sauce thickens (30-40 minutes).
16. By this time the stew will be almost ready.
17. Finely chop the dill and parsley.
18. Add the greens to the stew, mix everything well and simmer the meat stew for about another minute, then turn off the heat.
19. The stew is ready! The pleasant sweetish aroma of pork and vegetables spreads everywhere.
20. Serve hot meat stew with vegetables as an independent main course.
