Tasty, sticky, healthy, with a pleasant sourness. Blackcurrant jelly is a real delicacy that can be drunk both warm and cold. It's nice to drink warm on a cold winter day, and the chilled version will perfectly quench your thirst in the heat.
How to cook blackcurrant jelly? Prepare all the necessary ingredients. If the berries are fresh, sort them and wash them. Leave them in a colander for 10 minutes to drain excess water. Frozen berries must first be thawed; the juice from them will also go into the jelly. I used frozen currants. Choose potato starch for jelly. Corn is better suited for sauces.

Frozen currants (fresh) - 1 cup
Water - 1 l
Starch - 2 tbsp. spoons
Sugar - 2-3 tbsp. spoons (to taste)

1. Mash the currants with a wooden spoon and rub through a sieve.
2. Set aside the currant puree. Place the pulp in a saucepan, add cold water, add sugar. Put on fire, bring to a boil. Cook over low heat for 3-5 minutes. Remove from heat. Cool slightly.
3. Strain the finished compote and return to the pan.
4. Place starch in a bowl and pour in 0.5 cups of cold water. Stir thoroughly until completely dissolved.
5. Return the pan with the compote to the heat and bring to a boil. Reduce heat to medium. Pour in the prepared starch in a thin stream, stirring the compote all the time.
6. Cook the jelly, stirring constantly (so that no lumps form) for 2-3 minutes. Add currant puree. Stir and remove the finished jelly from the heat.
7. Currant jelly is ready. Bon appetit!
