Enchiladas are a very tasty and easy-to-prepare dish made from thin Mexican tortillas with filling.
Tortillas with ham, cheese and sweet peppers are baked with sour cream and vegetable sauce. A dish you can't tear yourself away from! Tasty, satisfying and not troublesome! Preparing the ingredients for the enchilada.

Tortillas - 8 pcs.
Sausage (ham) - 200-300 g
Hard cheese - 150-200 g
Bell pepper - 2 pcs.
Onions - 1 pc.
Garlic - 4-5 cloves
Tomato paste - 2-3 tbsp. spoons
Sour cream - 250 g
Vegetable oil - for frying
Provençal herbs - to taste
Ground paprika - to taste
Salt - to taste
Ground red pepper - to taste
Water - 0.5 cups

1. We will need tortillas.
2. How to prepare enchilada with ham, cheese and vegetables: Cut the bell pepper into cubes.
3. Chop the onion.
4. Cut the sausage in any order.
5. Grate the cheese.
6. Chop the garlic.
7. First of all, fry the onion and half the garlic in vegetable oil.
9. Add half of the bell pepper.
10. Sprinkle with your favorite seasonings, salt, pepper and fry for a couple of minutes.
11. Add tomato paste to the resulting mass and add water (0.5 cups), leave the sauce to simmer for a few more minutes.
At the very end, add sour cream and turn off the stove, leaving the sauce to simmer.
12. Place a filling of sausage, cheese and bell pepper on each tortilla, add chopped garlic and roll the tortilla with the filling into a roll.
13. I wrapped all 8 tortillas this way. Place the filled flatbreads in any heat-resistant dish.
Place the prepared sauce on top and carefully distribute over the entire surface. Sprinkle grated cheese on top.
Place the enchilada in the oven, preheated to 200 degrees, for 15-20 minutes.
14. When the time is up, take the enchilada with ham and cheese out of the oven and enjoy the great taste of the dish.
