Today I want to share with you a recipe for a simple but incredibly tasty green tomato snack.
Let's prepare green tomatoes in Georgian style. Extremely easy to prepare and modest in the number of ingredients, green tomatoes marinated in Georgian style turn out incredibly tasty and aromatic. Stuffed with celery greens, garlic and pieces of hot pepper, pickled green tomatoes prepared according to this recipe are crispy, moderately spicy, with a piquant sour taste and so aromatic that it is simply impossible to resist them! Try it!

Tomatoes – 1 kg
Celery – 1 bunch (large)
Hot pepper – 50 g
Garlic – 50-70 g
Water – 1 l
Salt – 2 tbsp.

1. Wash and sort the green tomatoes. Slice the tomatoes in half or crosswise without cutting all the way through to keep them intact.
2. Prepare the filling: finely chop the garlic and hot pepper. If you do not like very spicy snacks, first remove the seeds and cut the pepper into large pieces. I prefer a spicier option, so I do the opposite - leave the seeds and chop the pepper very finely. Separate the celery stalks from the leaves. Finely chop the leaves and add the whole stems to the marinade. Mix all prepared ingredients.
3. Fill the tomato slits with filling.
4. Prepare the marinade: measure water, add salt and bring the mixture to a boil.
5. Place celery stalks in the bottom of a bowl or marinating container. Then, layering, add the prepared tomatoes. Top with remaining celery stalks. Pour boiled salted water over the tomatoes.
6. Set to light pressure, cool the tomatoes completely and place in a cool, dark place (I store the tomatoes on the balcony).
7. Small-sized tomatoes will be ready in 6-7 days, larger ones will take 10 days. I admit, we don’t monitor the timing at all, because we slowly begin to taste the tomatoes the very next day - the tomatoes turn out incredibly tasty, spicy and so aromatic that is simply impossible to resist!
