1. When getting started, remember: this dough does not like heat, so it is advisable to keep the kitchen cool and all the ingredients chilled. Chill the butter in the freezer for at least 2 hours. It must be combined with flour and salt. You can do this in a food processor, or you can grate it by mixing in flour. Constantly mix the butter you are grating with the flour.

2. Add cold sour cream and knead the dough until the products are combined. Knead the dough quickly.

3. Then gather the dough into a ball, wrap it in cling film and refrigerate for 1 hour.

4. Cut the leek into half rings.

5. Leave a few mushrooms to decorate the pie, cut the rest.

6. Fry the mushrooms in olive oil over high heat in a preheated frying pan until the liquid evaporates. Once it has evaporated, add the leeks and fry together for another two minutes. The filling should remain juicy as it will still be baking.

7. While the filling is cooling, let's make the dough. Roll it out between two sheets of baking paper and place it in the pan, pricking the bottom with a fork so that the dough does not rise in humps. Or you can line it with baking paper and add peas. Place the dough in an oven preheated to 180 degrees for 25 minutes.

8. Beat the eggs into a bowl and beat them with a whisk until the white and yolk combine.

9. Add cream to the eggs. We continue to beat.

10. Grate the cheese on a grater with small holes.

11. Leave two spoons of cheese to sprinkle on the top of the pie, and add the rest to the egg-cream mixture. Mix.

12. Place mushrooms and leeks into the baked base.

13. Fill with filling, level, sprinkle with finely chopped dill.

14. Sprinkle cheese over the dill and lay out lightly fried mushroom slices.

15. Place the mushroom quiche in the oven for 35-45 minutes at 180 degrees.

16. Let him rest for 10 minutes, covering him with a towel. Then remove from the mold.
