Baking Easter cakes is my weakness.

For many years I did not deal with this issue, since it was the business of my grandmother and mother. When, years later, I got a good oven, I tried to bake Easter cakes myself and I succeeded the first time. Since then, I couldn’t stop and every year I definitely try something new. I have already baked Easter cakes with kefir, and today I can safely share this recipe with you. The big advantage of kefir-based cake is that it doesn’t use a lot of eggs and you don’t have to work on the dough for a long time. We made the dough, left it warm and you can do other things. Then they put them in molds and left them again until the dough rises. Then bake as usual and use a skewer to check for doneness.

To prepare kefir cakes (with candied fruits), prepare the necessary ingredients from the list. Pour the yeast into warm water or milk and leave for 15 minutes until the yeast rises to the top.

Ингредиенты

Flour - 450-500 g

Kefir - 320 ml

Water (milk) - 50 ml

Sugar - 150 g

Salt - a pinch

Butter - 70 g

Dry yeast - 6 g

Eggs - 2 pcs.

Candied fruits - 150 g

1. Next, pour kefir at room temperature into a bowl, add sugar. Separate the yolks from the whites; the whites can be immediately put in the refrigerator, as they will be needed to prepare the glaze. Add the yolks to the bowl with kefir.

2. Melt and cool the butter, add it to the bowl along with the rising yeast, stir.

3. Add salt and sifted flour to the dough. Flour should be added in parts.

4. The dough will be sticky, as it should be. Cover the bowl with the dough with a towel and place in a warm place for 1.5 hours.

5. While the dough is rising, cut the candied fruits and roll them in flour. I used candied dogwood, raisins and dried apricots. Knead the risen dough and add candied fruits to it. Mix the candied fruits well into the dough.

6. Cover the molds with parchment and spread the dough into half of the mold. Place in a warm place again for another 1.5 hours, until the dough reaches the height of the molds.

7. Preheat the oven to 190 degrees and bake Easter cakes with candied fruits for 40-45 minutes. Check readiness with a wooden skewer; it should come out dry. Turn the cakes on their side and cool slightly, covering with a towel. Then remove them from the molds.

8. Decorate the Easter cakes with any icing and confectionery sprinkles. I used ready-made frosting from a bag. You can also decorate with various figures. And, of course, I immediately cut one Easter cake to see how it turned out inside.
