Clear apricot jam

Everyone in our family loves jam, so I always make a lot of it. For this I use different fruits, berries and even vegetables. Each family member has their own taste preferences, but everyone loves apricot. I often use it in baking or as an impregnation.
Preparing delicious clear apricot jam for the winter is not difficult, but not very fast. To prevent it from losing its beautiful rich color, the jam should not boil too much and should not boil for a long time. There must be moderation in everything. A kilogram of apricots makes a liter of jam.

1. Remove the pit from the washed apricot, carefully breaking it into two parts.
2. Place the prepared apricot halves into a container in which the jam will be prepared and cover with sugar. Close the lid and leave for a while, at least an hour.
3. During this time, the sugar will become wet and begin to melt, and the apricot will begin to release juice. Can be sent to the stove. The fire should be low, below average.
4. Bring to a boil without stirring, without destroying the structure of the apricot slices. Remove from heat, cover and leave to cool completely.
5. Then return to the heat again (the heat should be low) and bring to a boil without stirring. 5 minutes after boiling, remove from heat and leave to cool completely.
6. Repeat this procedure 2 more times. This time will be enough for the apricot to cook, but not lose its shape, and the syrup itself has boiled down. After cooling completely, the jam will be quite thick and transparent. If you want to get a homogeneous transparent jam, then during the last boiling, grind the mass with a blender and boil for another 5-7 minutes.
7. Add water to a small saucepan and bring to a boil. Place a circle on top, place a washed jar on it and, without reducing the heat, sterilize for 5 minutes.
9. Fill the jars to the top with thick, bright and aromatic jam. Immediately seal the jars with clean, dry lids.
10. Turn the jars upside down and wrap them warmly until they cool completely.
11. Transparent apricot jam is perfectly stored all winter in the basement and in the apartment pantry.
