Pasta with eggplant and tomatoes

Another hearty vegetarian dish. Ingredients: spaghetti (or any other pasta), eggplant, tomatoes and onions.
Sometimes you want to add some variety to a side dish and give it some zest. Today I prepared very tasty spaghetti with onions, eggplants, tomatoes and herbs. The dish can be served either on its own or as a side dish for meat/fish dishes. I hasten to share the recipe with you.
Cut the onion into half rings. Heat vegetable oil in a frying pan and fry it until transparent.
Ингредиенты
Eggplant - 1 pc.
Tomatoes - 2 pcs.
Spaghetti – 250 g
Onion - 1 pc.
Garlic - 2 cloves.
Vegetable oil - 3 tbsp. l.
Dill and basil - to taste
Salt - to taste
Рецепт
1. Wash the eggplant and trim the butts.
2. Cut the eggplant into small cubes and add to the pan with the onion.
3. Stir and fry the eggplants and onions for about 15 minutes.
4. Meanwhile, pour boiling water over the tomatoes and remove the skins and cut into small pieces. Add to the pan, stir and fry for another 5 minutes.
5. Add finely chopped herbs and simmer for another 10 minutes.
6. Boil the pasta until half cooked, rinse in a colander and add to the pan with the vegetables. Stir, pour in a glass of water, cover and simmer for 10 minutes until the pasta is ready.
7. You can serve spaghetti with tomatoes and eggplants as a separate dish, or with any meat dishes. You can also sprinkle finely grated cheese on top of the pasta if desired.
