Baked vegetable stew with zucchini is a dietary, healthy dish that can be eaten by everyone, young and old.
The dish, the recipe of which I want to share, is easy to prepare and will take you very little time. Oven-baked zucchini stew is perfect for both vegetarians and those on a diet. For me, such a stew is sometimes a salvation.
Of course, you can replace a fresh tomato with a canned one, but it won’t be the same, it won’t have the same taste. You can also use any zucchini, I used zucchini.
So, to prepare baked zucchini stew, we will prepare the products according to the list.

Large zucchini - 1 pc.
Carrots - 1 pc.
Onions - 1 pc.
Garlic - 1-2 cloves
Tomatoes - 1-2 pcs.
Refined sunflower oil - 3 tbsp.
Parsley - 10 sprigs
Salt, pepper - to taste

1. Chop the zucchini fairly large and add salt to taste. Place in a baking dish and place in an oven preheated to 200 degrees for 15-20 minutes.
2. While the zucchini is baking, chop the remaining vegetables and fry over high heat for just a couple of minutes.
3. Add chopped tomato, parsley and pepper. Fry, stirring, for another minute.
4. Take out the mold with the zucchini, put the vegetables in it, and mix. Place the pan in the oven and bake at the same temperature for 20-30 minutes. Be guided by your oven. The oven-baked zucchini stew is ready. Delicious both warm and cold. Serve either as a separate dish or as a side dish.
