Ruddy, aromatic eggless zucchini pancakes are a simple and delicious version of pancakes that can be made from both fresh and frozen zucchini.

Zucchini – 1 kg
Wheat flour – 70-100 g (as needed)
Corn starch – 2-3 tbsp. (without slide)
Garlic – 3 cloves
Lemon (zest) – 1 pc.
Green onions – 1 bunch
Mixture of Italian herbs – 1 tsp. (taste)
Ground black pepper - to taste
Salt - 1 tsp. + to taste
Baking powder - 0.25 tsp. (optional)
Vegetable oil - for frying

1. Grate the zucchini on a fine grater. Add 1 teaspoon of salt, stir and leave the zucchini for 20-30 minutes so that they release the juice.
2. Grate the zest of 1 lemon, finely chop the green onions and garlic cloves.
3. Drain off all the released juice and carefully squeeze the zucchini. The more liquid you can remove, the less flour you will need.
4. Add chopped green onions and garlic, lemon zest, dried herbs and ground black pepper to taste to the zucchini. Mix everything well.
5. Add starch and sifted flour mixed with baking powder. Mix everything well. Taste the mixture and add a little salt to taste if necessary.
6. Add flour as needed, stirring into the mixture in small portions until the dough reaches the desired thickness.
7. I like to make a very thick batter because this way the pancakes can be shaped a little more neatly by shaping the mixture with your hands dipped in water.
8. Divide the dough into portions of 1-2 tablespoons and fry the zucchini pancakes without eggs over medium heat for 4-5 minutes on each side, until golden brown.
9. Place the fried pancakes on a paper towel for 1-2 minutes to absorb excess oil, and then serve.
