Refreshing summer soup

If desired, you can add more sausage or any boiled meat to it, then the soup will become more satisfying. You can serve this soup with sour cream, but this is not necessary. In our family, some ate it with sour cream, while others liked it better without it. To make the soup as summery and refreshing as possible, just put the tomato juice in the refrigerator first.

Ингредиенты

Tomato juice - 0.5 l

Large potatoes - 1 pc. (237 g)

Eggs - 2-3 pcs.

Cucumber - 1 pc. (100 g)

Radishes - 4 pcs. (110 g)

Green onions - 20 g

Cilantro - 15 g

Salt, pepper - to taste

Sour cream - for serving

1. Potatoes must be boiled in their skins. To do this, rinse it thoroughly and place it in a saucepan with water so that the water completely covers the potatoes. Cook the potatoes after boiling over low heat for about 25 minutes. You can check readiness by piercing the potatoes with a knife or fork. They should fit into the potatoes easily. To help the potatoes cool down faster, after cooking, immerse them in cold water for a few minutes.

2. Boil the eggs hard, i.e. Cooking time after boiling is 8 minutes.

3. Finely chop the radishes and cucumbers. I also peeled the cucumbers first, but this is not necessary.

4. Add chopped cooled jacket potatoes and chopped boiled eggs to the vegetables.

5. Then finely chop the cilantro and green onions and place in a bowl with the rest of the chopped ingredients.

6. It remains to pour in the tomato juice, and if necessary, salt and pepper the soup to taste.

7. Tomato okroshka is ready! When serving, you can additionally add 2 quartered eggs and sour cream.
