Closed, thin and very tasty pizza, prepared according to a rustic recipe
Once I saw an advertisement for this pizza online and decided to try it no matter what. My husband and I found that same bakery, a bakery, not a pizzeria, and bought pizza. I must say that we were not disappointed; it was as tasty as it was beautiful. Here is my attempt to repeat that rustic pizza, the taste of which remained in my memory, without knowing its exact recipe and not even having the right size baking tray. Now there is no advertising, there is nowhere to see the work process, and the secret recipe is not revealed.
One thing is clear that the pizza contains mashed potatoes, and not raw potatoes, as in other village pizza recipes, boiled chicken meat, and not smoked chicken, fried mushrooms and sour cream. I forgot to mention the taste... Pizza is like a pie, with thin, crispy dough, tender and juicy filling, the smell of butter and mmmm... you have to try it. I know that those who have tried it are looking for the recipe and can’t find it)))
It is convenient to prepare such a pizza if there are boiled potatoes left over from the evening, and there is a piece of boiled chicken in the refrigerator, for example, from soup. Then the cooking process is greatly simplified.

Pizza dough - 400 g
Potatoes - 2 pcs.
Champignons - 150 g
Chicken breast - 200 g
Greens - 1 tbsp.
Sour cream - 3-4 tbsp.
Garlic - 2 cloves
Butter - 3 tbsp.

1. Salt the sour cream well and mix with crushed garlic cloves.
2. Cut the champignons into slices and fry in a small amount of vegetable oil. Lightly salt and pepper.
3. Boil the potatoes in salted water, then drain all the water completely and mash the potatoes
4. Melt the butter.
5. I took half a portion of yeast pizza dough, which I kneaded myself according to this recipe. Divide the dough into two parts. Roll one of them very thin, until transparent, and place on a baking sheet greased with oil. If you take parchment, then grease it with oil, just in case. Spread the prepared sour cream and garlic over the dough. As for the shape, of course, it is better to make the pizza round, but my baking sheet is small and the circle would also turn out small. I decided to make the pizza square to make it bigger.
6. Then distribute the mashed potatoes and herbs.
7. Arrange thinly sliced chicken and fried mushrooms.
8. Cover with a second layer of dough, which you also roll out thinly. Trim the bottom and top edges of the dough, pinch them tightly and brush the pizza with melted butter. Save some oil for last. Bake the pizza at the highest temperature of your oven, mine is 250 degrees. Approximate time - 7-10 minutes. The surface of the pizza should be well browned.
9. Remove the rustic pizza from the oven and immediately brush it with the remaining butter, sprinkle with herbs and serve. My result was not as beautiful, but just as tasty.
