You can freeze broth from any type of meat, poultry or fish that you like best. I prefer beef and turkey. After defrosting, the broths do not lose a drop of their taste, so it is unlikely that anyone will guess that the basis of the dish you have chosen is broth prepared for future use. Meanwhile, such preparations will save a lot of time if you like first courses, as well as a variety of sauces based on meat broths.
Before you freeze the broth in the freezer, you need to cook it... Prepare all the necessary ingredients for cooking the broth. It is better to take the meat on the bones, then the broth will be richer. If you have frozen meat, then for a more gentle defrosting you should move it to the refrigerator compartment overnight in advance. Peel the onions. It is better to use filtered water.

1. Rinse the meat thoroughly and place in a pan filled with water. For aroma and taste, add onion and spices. We do not add salt to the water; the universal stock must be fresh.
2. I will simmer the broth in the Instant Pot for 40 minutes on low pressure. This will save me a lot of cooking time, I don’t need to keep an eye on the broth, and the meat will be extremely tender in the end.
3. On the stove, simmer the broth over low heat, covered, until the meat can be easily separated into fibers. Depending on the quality of the piece, its cooking time can reach up to 1-1.5 hours. Focus on the softness of the meat.
4. Remove the onion from the finished broth; it will no longer be needed. Remove the meat and use it for other dishes (empanadas, for example). Although, in my opinion, soft boiled beef is also good as an independent dish with coarse sea salt.
5. To lighten the broth a little, I suggest straining it through several layers of thick gauze. Next, before you freeze the broth in the freezer, give it time to cool completely. To speed up the process, you can pour it from the pan into another container. In winter, just move the covered pan outside, but remember: it’s too early to freeze, just cool it
6. Pour the cooled broth into silicone muffin molds and freeze at a temperature of -18°C and below. Freezing time will depend on the size of the molds. My bouillon muffins took about 40 minutes to harden completely, but I used the special fast freeze setting provided by my refrigerator model.
7. Remove the frozen broth pucks from the silicone molds. It is convenient to store the broth in a tight freezer bag, distributing the pucks vertically, one on top of the other.
