Delicious and nutritious chicken broth for soup is very easy to prepare at home.
If you don’t know how to cook broth for chicken soup, then I will be happy to tell you a few secrets of its creation.
You can cook it from any part of the chicken or from the whole carcass, having a spacious saucepan or cauldron on hand. The main thing to remember is that it is best to soak the meat for about 1-2 hours before cooking, otherwise you may end up with an opaque and cloudy broth. This is done in order to extract blood from the meat - it is the blood that coagulates in boiling water and forms a cloudy and dirty foam on the surface of the liquid in the pan. If you do not have free time for soaking, the finished broth can be passed through 2-3 layers of gauze and clarified by heating it in a saucepan along with the whipped egg white, and then strain through cheesecloth again.
To make the dish tasty and aromatic, chicken meat or chicken parts should be filled with cold water. When heated, the meat will give off its aroma, but boiling water will immediately seal the meat, and the juice will remain inside it.

Salt - 4 pinches
Water - 1.5 l
Thyme - 2 sprigs (4 g)

1. Wash the chicken parts, cut off the veins and membranes from them, cut them if necessary and place them in a pan.
2. Fill with cold water and place on the stove, turning on medium heat. After about 5 minutes, remove the resulting foam with a slotted spoon, mix everything carefully and remove the foam again.
3. Boil for about 10 minutes and add salt, bay leaves, black peppercorns. We will not add any onions or carrots to the broth - they will be used when cooking the soup. Also, we will not add fresh herbs to the broth - they will give it a greenish tint. Let's simmer everything on the stove until the chicken meat is completely cooked - there will be less broth, but it will be richer. 2 minutes before readiness, add a couple of sprigs of dried or fresh thyme to enhance the aroma. It can be replaced with rosemary or celery.
4. If the broth turns out cloudy, strain it through a fine-mesh strainer. You can remove the chicken meat and use chicken broth to cook a delicious soup with vegetables or noodles, preferably homemade! Now you know how to cook broth for chicken soup.
