1. Crack two small eggs into a deep bowl and beat them with a whisk until foamy.
2. Pour in milk and vegetable oil, continue whisking.
3. Add sifted flour, salt and sugar without a slide, mix everything until smooth, make sure there are no lumps. Let the dough sit for 10-15 minutes before baking the pancakes.
4. Grease a frying pan with refined vegetable oil, pour in half a ladle of dough and bake pancakes on both sides over moderate heat, about 30 seconds. Place the finished pancakes in a stack on a flat plate.
5. We will need these products to prepare the filling. Peel the onions and carrots, wash and dry them, boil the heart in advance.
6. To do this, soak the heart in cold water for about an hour, cut it, put it in a saucepan and boil in slightly salted water for an hour and a half. If you wish, you can add peppercorns and bay leaves to the water for flavor. Cool the finished heart.
7. Cut it into pieces, transfer it to a blender, and beat at medium speed until minced.
8. Heat a little vegetable oil in a frying pan, add chopped onions and carrots, fry for a few minutes until soft.
9. Place the minced pork heart into the frying pan.
10. Place 1.5 tablespoons of filling in the middle of the pancake.
11. And wrap them however you like. Do the same with all remaining products.
12. Wrapped pancakes with heart filling can be lightly fried in butter.
