As Eat Pray Love author Elizabeth Gilbert says, “Italians take every ingredient they know and make a feast out of it.” According to her, "there are several ways to create happiness more effectively than cooking for yourself and others." In honor of the Julia Roberts movie, we have chosen perhaps one of the most famous simple Roman pasta sauces, made from black pepper and aged pecorino romano. 0.5 kg pasta, preferably tonnarelli or spaghetti
4 tbsp extra virgin olive oil
2 tsp freshly ground black pepper, plus more to taste
1 cup finely grated pecorino romano
3⁄4 cups finely grated Cacio de Roma

1. Bring a pot of salted water to a boil.
2. Add pasta; cook until al dente, 8-10 minutes; Prepare 1 cup water for pasta and drain.
3. Meanwhile, heat the oil in a 30cm skillet over medium heat until shimmery.
4. Add pepper, cook until fragrant, 1-2 minutes. Pour 3/4 cup pasta water into skillet, bring to a boil. Using tongs, transfer the pasta to the skillet; Distribute it evenly.
5. Sprinkle 3⁄4 cups of pecorino romano and cacio de roma over pasta; Stir vigorously until the sauce is creamy and sticks to the pasta without lumps, about 2 minutes, adding more pasta water if necessary.
6. Transfer to 4 plates. and sprinkle with the remaining pecorino and pepper.
